The Big Paella

The Big Paella for a Big Lunch...


On May 20th I was asked on to STV's The Hour to help promote awareness of The Big Lunch which in case you dont know is all happening on June 5th . The Big Lunch in its simplest form is a very basic but profound act of community when we are encouraged to knock our neighbours door and invite them in for a spot of lunch or you can go crazy and stop the traffic with a brass band and full on BBQ!

Maybe this is taking The Big Lunch a bit far....

The other promotional activity for The Big Lunch was a cook off between myself and Fatima Uygan from the team that rescued the Govanhill Community Baths. Fatima is no mean cook and was a Masterchef 1/4 finaslist, apparently only losing because of allegedly cursing Greg Wallace-good on ya girl! I survived the battle and an honourary draw was declared.

Paella

Serves 8

Prep time 20 min

Cook time 40 min

Ings;

4 tbsp Olive oil

500g Bomba/paella rice

100g diced chicken thigh

100g diced pork

100g chorizo

200g prawns

2 red peppers diced 1 red onion diced

4 clove garlic crushed

150 g frozen peas

Pinch saffron

Pinch paprika

1.5 litre chicken stock

500g mussels cleaned and scrubbed

Handful chopped flat leave parsley

2 lemons ΒΌ

Method;

1.Heat chicken stock with saffron and paprika.

2.Heat oil in large wide heavy bottomed paella pan, chicken and pork and fry till golden, remove .

3.Add red onion, garlic and chorizo to pan and fry till golden brown, add pork, chicken, rice and 1l stock, bring to boil , turn down to simmer, cover and cook for 20 min.

4.After 20 min rice should be nearly cooked . Pour in rest of stock, peas , prawns and mussels. Put on lid and cook for 10 min more.

5.Finally sprinkle over parsley and garnish with lemons.
