Walking in a brownie wonderland...
Well all the chats about the weather- and no bloody wonder, not in living memory has it been this bad…not that the kids are complaining…schools are closed and Asda’s running out of sledges!
Fortunately my key staff live Glasgow city centre so we are able to open the restaurant but I’ve been snowbound for a couple of days now and my cupboards are beginning to have a look of Old Mother Hubbard about them. After a hard days sledging we thought it would be a good idea to whip up a batch of brownies-Nigellas cheesecake variety being a particular favourite- however we’re out of chocolate – not even a scant bag of buttons. So after some modification I created a brownie recipe using the last of our eggs and cocoa powder and lush they are too..! Praying for a thaw now mind you…challenging the kids on the wii and listening to Justin Beiber beginning to drive me crazeeeeeee!
Pre-heat oven to 180C/Gas 6
3 eggs , 130g unsalted butter, 150g golden caster sugar, 60g cocoa powder, 175g self raising flour, 1 tsp vanilla extract, 2 tbsp golden syrup.
1. Cream butter, vanilla, golden syrup and sugar til light and creamy.
2. Crack in eggs and beat till thoughroughly incorporated.
3. Seive in flour and cocoa powder and fold together.
4.Pour into shallow brownie tray and bake for 25/30 min-centre should be springy when touched.
