Me, Daisy and a Sundae?

A day spent with my favourite suppplier...oh and Daisy the coo!

If asked “what’s your champion produce” any chef worth his salt shouldn’t have to think about it. Top quality seafood, game, poultry, meat, fresh produce, dairy, breads, baking and preserves are all now widely available and supplied by artisan producers from all over Scotland to Scotland. The beauty is that in the main its seasonal, local and quality.I had to make a tough call in singling out a sole supplier/producer but Thorntonhall Farmhouse Ice Cream got my vote. Started in 2003 on the Meilke Dripps Farm Thorntonhall by John and Micki Henderson, their plan was simple but brilliant convert an existing barn into an ice-cream production unit and turn the milk surplus into the best ice-cream available. It’s the best because they combine milk fresh from the mornings milking with award winning Corrie Mains Farms free range eggs, sugar, natural flavourings and that’s it, all good and all free of artificial colourings, emulsifiers and stabilizers. They also don’t whip any air into the ice cream so the finnished product is rich, luxuriant and heavy with cream. We team up a slice of hot chocolate chip brownie with a ball of their honeycomb ice-cream for spectacular results and a scoop of cream ice-cream in a strawberry sundae is the perfect summer pudding.
